Abstract

The area of Jerusalem artichoke cultivation in the world is 2.5 million hectares, including 700,000 hectares in the USA, 500,000 hectares in France, 130,000 hectares in Austria, and 60 hectares in Uzbekistan. Jerusalem artichoke is a productive plant, 50-60 tons of tubers can be obtained from 1 ha. Jerusalem artichoke cultivation areas are expanding in countries such as England, Germany, Hungary, Poland, Japan, China and Russia. This once again shows the importance of this plant.
